Chinese Sesame Candy

Ingredients:

  • 1 cup white sesame seeds (or black sesame seeds, or a mix)
  • 1/2 cup granulated sugar
  • 1-2 tablespoons water (optional, for easier melting)
  • A pinch of salt (optional, to enhance flavour)

Instructions:

Toast the Sesame Seeds:

  • Heat a dry skillet or pan over medium heat.
  • Add the sesame seeds and toast them, stirring constantly, until they turn golden brown and release a nutty aroma (about 3-5 minutes). Be careful not to burn them.
  • Remove from heat and set aside.

Prepare the Sugar Syrup:

  • Add the sugar (and water, if using) to a clean, non-stick pan and heat over medium-low heat.
  • Stir gently until the sugar melts and turns into a golden amber-colored syrup. Avoid overcooking, as it can burn quickly.

Combine Sesame Seeds and Sugar Syrup:

  • Once the sugar syrup is ready, quickly add the toasted sesame seeds and a pinch of salt (if using). Mix well to ensure all the seeds are coated evenly.

Shape the Candy:

  • Pour the mixture onto a parchment-lined baking sheet or a silicone mat.
  • Use a spatula or rolling pin to press and flatten the mixture into an even layer (about 1/4 inch thick).
  • While still warm, cut the candy into small squares or rectangles using a sharp knife or pizza cutter.

Cool and Set:

  • Allow the candy to cool completely at room temperature. It will harden as it cools.
  • Once hardened, break or cut along the pre-scored lines.

Serve and Store:

  • Enjoy your homemade sesame candy! Store in an airtight container to keep it fresh and crunchy.

Useful Tips:

  • Add a small amount of honey or malt syrup to the sugar mixture for a richer flavour.
  • Be cautious when working with hot sugar syrup, as it can cause burns.
  • Experiment with different ratios of sesame seeds to sugar for a sweeter or nuttier taste.
