Toast the Sesame Seeds:
- Heat a dry skillet or pan over medium heat.
- Add the sesame seeds and toast them, stirring constantly, until they turn golden brown and release a nutty aroma (about 3-5 minutes). Be careful not to burn them.
- Remove from heat and set aside.
Prepare the Sugar Syrup:
- Add the sugar (and water, if using) to a clean, non-stick pan and heat over medium-low heat.
- Once the sugar syrup is ready, quickly add the toasted sesame seeds and a pinch of salt (if using). Mix well to ensure all the seeds are coated evenly.
Shape the Candy:
- Pour the mixture onto a parchment-lined baking sheet or a silicone mat.
- Use a spatula or rolling pin to press and flatten the mixture into an even layer (about 1/4 inch thick).
- While still warm, cut the candy into small squares or rectangles using a sharp knife or pizza cutter.
Cool and Set:
- Allow the candy to cool completely at room temperature. It will harden as it cools.
- Once hardened, break or cut along the pre-scored lines.
